What’s in season now: five courgette recipes

At their best between June and September, courgettes are versatile and readily available at the moment. The best specimens are firm, with glossy, unmarked skin, and not too big (the recommended size for harvest is 10cm/4in, but a bit bigger than this is fine) otherwise seeds will become too large and the flesh won’t be quite as sweet and delicate.

There are many ways to cook courgettes, but boiling just reduces them to a tasteless mush – if you want to cook them simply, either roast rounds of them in a hot oven, drizzled with olive oil and with a sprinkling of sea salt and pepper, or slice them into batons and fry them in a very hot pan, turning the heat right down once they’ve coloured and adding a little chopped garlic for a few minutes; once off the heat, add a little extra virgin olive oil, lemon and seasoning and you have a side dish that could well become the main event.
